Fibre-Rich Energy Balls

Super popular because of their big-batch convenience, no-bake method, and portability; these tasty snacks are nutritious and delicious too!

Because this is such an easy recipe to customize, the nutrition stats can vary so I won’t give a full breakdown. However, as written below, the base recipe before add-ins will give 3g of fibre and 5g of protein, if you get 20 balls per batch. Pair one with a piece of fruit for a large snack, or two with some greek yogurt and berries for a quick breakfast!

Fibre, especially soluble fibre found in the oats and chia seeds, is beneficial for regularity and preventing constipation, managing blood sugar, reducing LDL cholesterol, and satiety. Most people do not get enough fibre in their day, so make the nutritious choice a little easier with delicious snacks like these energy balls.

Fibre-Rich Energy Balls

Base Recipe (makes 20 balls):

  • 1 cup oats

  • 2/3 cup shredded coconut

  • 1 cup nut or seed butter

  • 1/2 cup ground flax or chia seed

  • 1/4 cup honey

  • 1 tsp vanilla extract

Optional Add-ins:

  • chocolate chip

    • base recipe + 1/4 cup mini chocolate chips

  • double chocolate

    • base recipe + 2 tbsp cocoa powder + 1/4 cup chocolate chips

  • white chocolate cranberry

    • base recipe + 1/4 cup white chocolate chips + 1/4 cup dried cranberries

  • oatmeal raisin cookie

    • base recipe (almond or cashew butter recommended) + 1/4 cup raisins + 1 tsp cinnamon

Directions

  • Mix all ingredients in medium bowl, stir thoroughly until well-combined.

  • Roll into small 1" balls; place into air-tight container and store in fridge for 1 month or freezer for 3 months.

Tip:

Warming your nut/seed butter and honey before adding to the dry mixture can make it easier to stir. Allow the mixture to cool back to room temperature before adding optional chocolate chips, as they’ll melt.
