Avocado Chocolate Pudding
Need a super simple but deceptively delicious dessert? This is it!
Avocados are creamy, full of fibre, healthy fats, and a variety of vitamins and minerals. 1/3rd of an avocado contains 3 grams of fibre, which makes it easy to meet your daily needs. In many areas, they’re available in both fresh and frozen options.
This dessert is best eaten within 24 hours however, you can squeeze an extra day out of it when stored in an airtight container.
Avocado Chocolate Pudding
For 2-4 small servings:
2 avocado (~1.5 cups frozen)
6 tbsp cocoa powder
¼ cup maple syrup
¼ cup milk or alternative
1 tsp vanilla extract
Directions:
Add all ingredients into a food processor or blender. Blend until smooth.
Portion into 2-4 small dishes.
Chill for at least 30 minutes.
Serve topped with fresh berries, sliced bananas or a sprinkle of shredded coconut.
Notes:
Adjust maple syrup or sweetener of choice to taste.
Any milk or milk alternative will work - coconut milk is lovely!
