Peanut Butter Stuffed Dates

Alright, this snack is so straightforward that I don’t think I can even call this a recipe. However, it’s so delicious that it still deserves its own post.

Simple, sweet, perfect for something light on the belly before exercise; these peanut butter stuffed dates are so quick that you could do it in your sleep.

Medjool dates are my favourite, however it will work with other types as well if that’s all you have. Consider soaking those smaller dates for a few hours beforehand to soften them up, but it’s not necessary.




Peanut Butter Stuffed Dates

  • Remove the pit from your date(s) without fully pulling apart the two halves of your date.

  • Spread a small amount of peanut butter (or other nut/seed butter) inside your date

  • Sprinkle some coconut and/or chia seed on the peanut butter

  • Top with a few chocolate chips

  • Enjoy!



With all the options for nut & seed butters and “chip” options, you could create a lot of different flavour combinations:

  • almond butter and skor bits

  • cashew butter, white chocolate chips and dried cranberries

  • sunflower seed butter and m&ms

  • wowbutter and dark chocolate
