Nut Butter Cinnamon Apple Oatmeal
On busy winter days, we may crave something warm and filling for breakfast but lack the time to make anything other than a bowl of cereal.
Oatmeal can sound boring, so we make it a little bit fancy (and more filling!) in this recipe. Cook once, feed multiple people or have leftovers ready to reheat later!
Nut Butter Cinnamon Apple Oatmeal
1 cup oats (quick, large, or steel-cut)
3 cups milk/alternative
3 tbsp nut butter
3 tbsp maple syrup or sweetener of choice (optional)
1 tbsp ground cinnamon
1 tbsp butter
3 small apples, diced
Directions
In a medium pan, heat butter until melted. Add diced apple and saute until soft and lightly browned. Set aside if done before oatmeal.
At the same time, add oats and milk to a medium pot and bring to a low boil; lower to a simmer and stir occasionally until thick (about 5-10 minutes for quick/large flake, 20+ minutes for steel-cut).
Add sweetener, cinnamon and nut butter to the pot; stir until combined.
Divide into 3 bowls, top with sauteed apples, and serve immediately.
Notes
Ensure milk does not scald; as soon as bubbles appear, lower to medium-low heat. If using stainless steel pot, you’ll likely need to stir more often or even continuously; it will tend to stick to the bottom of the pot.
Using milk instead of water gives a creamier texture and adds additional protein, however you can use any liquid you choose. We’re loving Fairlife milk and Natrel 18g milk in our oatmeal these days!
You can add the sweetener & nut butter to the individual bowls instead of the pot, if you’d like to tailor to each person.
You can refrigerate any leftovers; just add a splash of milk/liquid & stir 1-2 times when reheating in microwave or on stovetop. The starch in oatmeal leftovers can make it “stickier”, so experiment with how much fluid you need to add to return to your preferred texture.
