Easy Air Fryer Quesadillas

When you’re in a rush, the air fryer can be your best friend. These are easy enough for older kids and teens to make on their own (with supervision, as needed).

Depending on the sides you serve this with and the appetites of those sitting at the table, this may make enough for 2-6 people. You can easily adjust the recipe to make more or less though!

Ann Marion made these with a group of teens yesterday and they were a huge hit - everyone was able to use the toppings that they wanted for a quick supper. We used rotisserie chicken to make it even faster but leftovers or meatless options work great too.

Easy Air Fryer Quesadillas

Ingredients

  • 6 medium tortillas

  • 1-2 Bell peppers, diced

  • 1 Onion, diced

  • 2 chicken breast, cooked, chopped

  • 1 can black beans, drained and rinsed, lightly mashed (optional)

  • 1 cup shredded cheese

  • Salsa

  • Sour cream

  • Olive or canola oil (optional)

Directions

  • Place tortilla with one half on bottom.

  • Depending on your air fryer, you may be able to place two side by side this way.

  • Add ~1/3 cup of fillings of choice.

  • Sprinkle 2 tbsp of cheese over top of fillings

  • Fold over other half of tortilla and secure with toothpicks. Brush lightly with olive or canola oil if desired.

  • Air fry at 350-375F for 3-4 minutes, or until lightly brown. Flip and air fry for another 3-4 minutes or until lightly brown, cheese is melted and fillings are warmed through.

  • Remove tortilla, cut and serve with optional salsa and sour cream.

Dietitian Notes

  • Cook your peppers and onion ahead of time, if desired.

  • Cooking time and temp will vary based on your model. Your air fryer manual may have suggestions to follow.

  • If unsure, check 1-2x during cooking - lower and slower will give you time to adjust for your desired texture but may not give you the crisp edges of a higher heat.

  • Reheat in air fryer for best texture.
